D-Allulose (also called D-psicose) is well known as the most remarkable of rare sugars. It has been more than 20 years since D-allulose was first reported by Ken Izumori (Itoh et al., 1995). It exhibits 70% of the sweetness but only 0.3% of the energy deposition of sucrose. In addition, it has almost no calories . As an industrially important bioproduct, D-allulose was listed as “generally recognized as safe” (GRAS) by the US Food and Drug Administration (FDA) in 2002 and has been approved for use in candy, fruit juices, nutritional supplements, and other dietary products. Therefore, D-allulose has important application value in the food, pharmaceutical, and healthcare industries.
Allulose hit the shelves as an artificial sweetener in the 2010s. It's been touted for:
Tasting more like real sugar. Studies suggest that allulose tastes pretty similar to table sugar. It doesn't have the bitter or chemical taste found in some other artificial sweeteners. And research shows that people find the sweetness of allulose comparable to sugar.
Having fewer calories than sugar. While just as sweet, allulose contains less than 10% of the calories found in sugar.
Not contributing to cavities. Unlike sugar, allulose doesn't promote tooth decay.
Not affecting blood sugar levels. Allulose doesn't affect your blood glucose or insulin, making it a viable substitution for people with diabetes.
“Chemically, allulose is similar to fructose, which is found naturally in fruits,” DiMarino explains. “It's roughly 70% as sweet as sugar, so it tastes very similar. After being absorbed in the small intestines, it’s rapidly excreted, and therefore, has minimal contribution to your daily caloric intake.”
